HARVEST CHARACTERISTICS
In quantity terms, this harvest has been very similar to the previous one. Regarding quality, it has been a good one. As usual in our zone climatology favors us, preventing plague problems that could harm the fruit's integrity.
Since the past summer until the olive harvest, rain has been very scarce, and temperatures have been high; these two factors led to an acceleration in the olive ripening, and as a consequence of this the oil is more ripened and a bit less agressive or fruity.
Also, some olive batches affected by strong frosts we had in very determined zones in our region had to be separated.
